Cooling Cucumber Soup: Superfood Recipe

In the hot months of summer we need to make sure we are cooling excess heat. Cucumber is one of the best veggies to cool down from the inside-out, as it is a great anti-inflammatory (not to mention how packed with essential nutrients like antioxidants, vitamin K & B cucumbers are).

Pair cucumber with plain yogurt – one of the good, raw fats in Ayurveda, and also cooling in nature – and this cucumber soup is a powerful addition to any meal.

Ingredients:
1 cucumber, diced (peel if desired)
1c plain yogurt (recommend raw or Siggy’s full fat)
1/2 tsp cumin
1/4 tsp each turmeric and sea salt

Directions:
Mix all ingredients and blend in a blender or with an immersion/stick blender until smooth. Enjoy as a soup or condiment.
