Superfood Recipe: Homemade Vegan Pesto

Today I want to share with you my favorite summer staple: Homemade Vegan Pesto from our very own zivaTEACHER, Kelsey Mathes. While most of the ingredients are pretty traditional, this recipe utilizes nutritional yeast. Nutritional yeast is a perfect addition to any meal —  it’s one source of complete protein and vitamins, in particular, B-complex vitamins. It contains folates, thiamine, riboflavin, niacin, selenium and zinc, making it a popular superfood. Combined with the power of raw garlic’s antiviral and antibacterial properties, high quality oil, and fresh basil, your body will be thanking you with every refreshing bite.

This pesto is incredibly easy, extremely versatile (pesto pasta, pesto vegetables, pesto chicken- you name it), great for you, and it is downright delicious. Oh, and did I mention? All you need is a blender.

Homemade Vegan Pesto

  • 1½ cups fresh basil
  • 1/3 cup olive oil (or other high-quality and flavorful oil)
  • 1 cup pine nuts (other nuts, such as almonds or walnuts, may be substituted)
  • 4 cloves garlic
  • 1/3 cup nutritional yeast
  • salt and pepper to taste

Blend all together and enjoy.
